A raw twist on comfort food

Enjoy creating comfort food with a healthy raw twist. This hands-on class will teach you how to cut vegetables properly and how to make your own customized dressings and sauces, using a natural root for thickening instead of a traditional flour based roux. We’ll begin with a cauliflower, carrot, date & feta cheese salad with a fresh orange vinaigrette. For an entree, we’ll make a vegetarian take on a beef stroganoff served over a bed of raw zucchini noodles. Tempeh will be used for the meat replacement, bringing a healthy choice of protein, texture and flavor. We’ll end the meal with a fresh raspberry nondairy raw ice cream.
